I see people do it on CSpan all the time, that touching the nose thing. Some of them slide the finger down the side, some of them just tap a nostril, some of them pinch. But it's always immediately before or after a crucial bit of dialogue, and it always involves an evasion or equivocation. I've played enough baseball to know when there's a sign being given.
