How can I change the email address admin uses to contact me or notify me of new PMs?

You should be able to edit that in your profile. (Though it's been my experience that users editing their email address requires the admin to re-authorize the account. Meaning it'll be deactivated until I can confirm that it was a change undertaken by the authorized account holder.)

User Control Panel ==> Profile ==> Edit Account Settings ==> should be the first editable field.
